ImageTool is part of the Terrain SDK, and found here: E:\Microsoft Flight Simulator X SDK\SDK\Environment Kit\Terrain SDK (note: My SDK is installed on E:, yours may be somewhere else). If you haven't installed the SDK, it's a separate install on DVD 1 of the Deluxe edition. If you have updated FSX to SP2 or Acceleration, be sure also to update the SDK. ImageTool is documented in the Modelling SDK, in the section "Texturing Aircraft Models".

I also have the Saitek Evo - have used it for about 2 months now and am quite pleased with it - no problems.
