Can you point to what you read ,the problem was that when FSX came out it was not so good so they released SP1 then sp2 to fix the first copys and future copys of FSX ,then came accelaration which has 4 extra aircraft and the sp1 sp2 on disc with it ..

As Mike pointed out , Acceleration is the best and quickest way to install the service packs - also is required for most off the paywares released today .

Most of the problems reported when SP1 and SP2 came out were because of hacks/fixes applied by users before those service packs came out. A few problems have been observed with installation but in general, they are a must have- The service packs fix a whole heap of things with FSX and most addons require them to be installed.

If you are flying FSX without the service packs applied then you are potentially missing out on a lot of performance and features (espectially if you have a multi core processor, the power of which is only supported with application of SP2)
