Is there anybody who can give some advice on how you can change models for a plane?

By that I mean can you put the external model for say the POSKY 747 and mix it with the Ifly interior model?

You generally can't - the VC is part of the model.
You can obviously use a different 2D panel but that's it.

The only way I know is to repaint the textures for the interior - you won't have the "right" seats or interior layout but you can have the right colours. Of course - you need images of the airline's cabin interior.

No one will know....

Except me  (my job is Q for Airbus cabin interiors so I know various set makers and airline cabin layouts ;) ) but as I don't fly "tubes" I won't look...
