You see the Swedish Air Force nearly did purchase Zeros from the Japanese.

At the onset of World War II, the Swedish Air Force (Flygvapnet) was equipped with largely obsolete Gloster Gladiators. To augment this, Sweden ordered 120 Seversky P-35 and 144 P-66 Vanguard aircraft from the United States. However, on 18 June 1940 after the German occupation of Norway, the United States declared an embargo against exporting weapons to any nation other than Great Britain. As the result, the Flygvapnet suddenly faced a shortage of modern fighters. Several other foreign alternatives were considered: the Finnish VL Myrsky and Soviet Polikarpov I-16 were deemed unsatisfactory. The A6M2 model 11 was exactly what they wanted, and although they tried it became too difficult to find a delivery route from Japan to Sweden.

Eventually, the Flygvapnet purchased home-grown fighters in the form of the Zero-like FFVS J-22. This skin is my best guess at what the Zero would have looked like based on the J-22s that were used instead. "

The Germans did use Spitfires, KG200 used captured spitfires to teach tactics to Luftwaffe fighter crews, they also used B-17s and B-24s that were captured in operations too. One Mk V spitfire was even used to test the DB605 engine on the spitfire airframe to comapre it to the 109F/G series

In the European Theatre, it was relatively easy to get hold of enemy aircraft for comparative testing. It was a different story altogether in the Pacific.
