I'd love to know what multi-aircraft mod he uses so I can get the Tiger Moth in the shot as well!

Adam the best (and only, to my knowledge) is FlightControlReplay.
It has limitations but at least you can get a wingman.
I also used it in the Harvard series of posts here

I indeed used FlightControlReplay. It's not ideal, but it works great for screenshots.
