From what I have been told Air NZ has been short of a CFM56 since ZK-NGD had this incident in May (http://bit.ly/qCQlPP). For the interim an engine was 'borrowed' from another 737 which was about to undergo a D check and installed on ZK-NGD. When the 737 came out of the D check it needed a new engine so Air NZ bought ZK-NGF from the lessor 'borrowed' an engine and has since parted her out.
On another note i'm really happy the 737s are being replaced with A320s. While i still like the 737s (their interiors are much better than most other 737 operators), they were getting old and in need of replacement. The new domestic A320s have really nice interiors (http://bit.ly/pNzcwi) (http://bit.ly/rfpycN), the seats are really comfortably and I always notice the extra 18cm of cabin width
I hope Air New Zealand's remaining 737s find good homes and will spend much more time airborne.
