I use snapper.exe from this site. http://www.ovosoft.net/snapper/ It's as easy as pressing printscreen whenever you want a pic, then when you are done flying, check out the pictures you want saved.

I use ATi Tray tools, it's a free program but you need an ATi graphics card for it to work. I find that otherprograms either save the pics as huge .bmps or low-quality jpegs. Ati Tray tools saves as high-quality jpegs.
