Hey,
Well I have had flying lessons with two of the providers at Tauranga. I have learnt with Euroflight and the Aeroclub. The main three are:
Bayflight: The biggest flying school on the airfield. Phil Hooker (great guy) runs the place. I don't think you can go wrong with them.
Euroflight: Another pretty good place for flying with. They have 2 Cessna 150s, a 172 and an Air Tourer. Really nice and friendly there.
Tauranga Aeroclub: Pretty good if you like the more social and don't have a full time instructor on site. They have a C 152, Piper Warrior and can get others on request.
I would recommend Bayflight or Euroflight if you were wanting to do more full time but the Aeroclub is still good as you can participate in competitions, aeroclub activities etc
