Thats how Hornets cat launch even in sims you do not touch the stick on a cat launch the aircraft launches and climbs automatically. F-14s and older generation aircraft still require the pilot to hold the stick though, Hornet pilots use their other hand to hold the throttle forward incase it moves back during the launch. Prior to launching the pilot sets the trim for the aircraft as well and thats whats displayed in the right MFD in that video the trim position for the aircraft. Those cameras BTW are part of the aircraft now.(I saw it in the manual, they're everywhere on the Superhornet)
