I really don't think you'll have much of a problem. I have a fairly average system - already bogged down by REX and UT2 - and don't find the NGX any worse than any other aircraft.
The MCDU has a menu for tweaking screen updates for all the gauges (though I haven't fiddled with them yet).

For some reason I've yet to fathom I bought the iFly 737 a week or two ago. I suppose I thought the NGX was to be vapour-ware for a while yet.
To answer your question though - good as the iFly 737 is, the NGX really is in a totally different league. 10x better at least. When you see comments like "raises the bar" etc. you tend to take them with a pinch of salt, but in this case all the superlatives are fully justified. There's incredible attention to detail - and it just feels professional from the moment you use it. I don't think I've *ever* seen a jet in FSX like this one.
Considering the depth to which so many of the 737 systems have been modelled, I was amazed that I could jump in with a "hot" start and just GO. They've managed to make it easy for noobs like me (haven't RTFM yet) and still not compromised the full thing. Some developers either settle for something in-between, or just create an "easy" model. How PMDG managed to kill both birds I don't know, but it's quite an achievement.
I've never been near a 737 cockpit, let alone fly one, so I can't say how "realistic" it is. I'm sure feedback from real 737 pilots will be plentiful - and with the undoubted popularity of this add-on, I'm sure their criticisms (if any) will get integrated into updates pretty promptly.
Also, it's ended up being nowhere near as expensive as I thought ($81 NZ).
